Lunch: Ice Cream Sandwich

Recipe by Rose Dunnington You didn't think I'd forget about dessert, did you? This simple stacking of cookies and ice cream will make your mouth water. But you won't be drooling for long — it's ready in less than a minute!

Ingredients

1 or more scoops of your favorite ice cream
2 extra-large cookies of your choice
Sprinkles (optional)

Instructions

Scoop the ice cream onto the center of one cookie. (Depending on the size of the cookie, you may need two scoops.)
Place the second cookie on top. (For the best-looking sandwich, put the topside of each cookie facing out.) Gently press the top cookie down to create a solid connection between ice cream and cookies. If you like, use the knife to clean up the edges of the ice cream. You can also roll the edges in sprinkles. Take a bite of the sweetest sandwich in this book!
