Lunch: Peach and Nectarine Salsa

Replace the typical tomatoes with chunks of fruit for a fresh take on the classic spicy dip.

Ingredients

2 firm but ripe peaches
2 nectarines
1/2 c. chopped fresh cilantro leaves
1/2 red bell pepper
1/2 red onion
1 jalapeño
Juice of 1 lime (about 2 tablespoons)
chili powder
salt
Freshly ground pepper

Instructions

In a bowl, combine peaches, nectarines, cilantro, bell pepper, onion, and jalapeño.
Drizzle with lime juice and season to taste with chili powder, salt, and pepper. Serve immediately or refrigerate for up to 1 day.
