Baked: Vegan Mini Chocolate Cupcakes

Dairy-free chocolate cupcakes for when you need a treat.

Ingredients

1/4 cup oil
1.12 cups sugar
1/2 tsp salt
2 tsps vanilla
1 tbsp vinegar
1 1/2 cups water
1 tsp baking soda
1/2 cup cocoa powder
1 1/2 cups flour

Instructions

1. Mix dry ingredients, add wet, mix well.

2. Drop into mini muffin tins, approximately 1 tablespoon of batter.

3. Bake at 375 °F (190 °C) for about 15 minutes.
