Side Dish: Mini Flax & Whole Wheat Muffins
These mini muffins are packed with goodness.
Ingredients
1 cup whole wheat flour
1/2 cup flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 large egg
1/2 cup quick oats
3 tbsps vegetable oil
1 cup nonfat milk
1/2 cup ground flaxseed
Instructions
1. Mix all ingredients.
2. Divide into mini muffin cups.
3. Bake at 400 °F (200 °C) for 10 to 15 minutes or until they are done.
4. To test doneness insert a toothpick, and if clean when you pull it out it is done.
