Lunch: Saucy Chicken Salad
Chicken salad with some added flavor.
Ingredients
1 can chicken
1/2 cup salsa
1 tbsp mayonaisse, light
1 oz cheese, fat free
Instructions
1. Open can of chicken, drain as much as possible.
2. Chop chicken up with fork or spoon, then take a paper towel and press it on to the chicken to get as much of the liquid out as possible.
3. Mix in the mayonaisse (use very little, just enough to hold the chicken together). Stir well.
4. Mix in as much or as little salsa as you would like.
5. Top with cheese, like cheddar or American.
6. Try and be creative, add other salad ingredients.
