Ingredients

1 tablespoon tomato paste
1 1/2 teaspoons prepared horseradish
1/2 teaspoon celery seeds
4 to 8 dashes hot sauce, plus more as necessary (recommended: Tabasco)
1/2 teaspoon Worcestershire sauce
1/2 teaspoon fine sea salt
Freshly ground black pepper
3 pounds ground round
A little canola or olive oil, for brushing
