Lunch: Spicy Sausage and Peppers Rigatoni

Enjoy this spicy sausage and pasta dinner sprinkled with cheese - perfect for Italian cuisine that’s ready in just 30 minutes.

Ingredients

4 oz. uncooked rigatoni (pasta tubes with ridges)
2 hot Italian turkey sausage links, sliced
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1 cup low-fat chunky spaghetti sauce
2 tablespoons grated Parmesan cheese, if desired

Instructions

Cook rigatoni to desired doneness as directed on package. Drain; cover to keep warm.
Meanwhile, in medium nonstick skillet, cook sausage over medium heat for 10 minutes or until no longer pink. Drain.
Add bell peppers; cook and stir 3 to 5 minutes or until bell peppers are tender.
Stir in spaghetti sauce; cook 1 minute or until thoroughly heated. Serve sausage mixture over rigatoni. Sprinkle with cheese.
