Lunch: Maple Sausage

Ingredients
1 egg
2 tablespoons quick-cooking oats
1 1/2 teaspoon maple syrup
2 teaspoons chopped fresh sage (or 1/2 teaspoon dried sage)
1 clove garlic, finely chopped
3/4 teaspoon kosher salt
1/2 tsp chopped fresh thyme (or 1/4 tsp dried)
1/2 teaspoon freshly ground black pepper
1/4 teaspoon grated nutmeg
1/8 teaspoon each cayenne pepper, allspice and ground cloves
1 pound ground turkey (93 percent lean)
2 teaspoons olive oil
1 tablespoon chopped fresh parsley (optional)
