Lunch: Roasted Strawberries

Recipe by Lindsay Funston If you love strawberries, you need to try roasting them A.S.A.P.

Ingredients

1 lb. strawberries, tops sliced
1/4 c. sugar
1 tsp. vanilla extract

Instructions

Preheat oven to 350 degrees F. On a large parchment-lined baking sheet, toss strawberries with sugar and vanilla extract.
Bake until caramelized and juicy, 25 to 30 minutes.
Transfer to a glass jar and store in the refrigerator up to 1 week.
