Lunch: Quick Chicken Kabobs
Grilling up this quick dish of skewered chicken, nectarines, and onions is almost as easy as eating it.
Ingredients
1 lb. boneless, skinless chicken thighs
3 tbsp. olive oil
2 tbsp. soy sauce
3 large nectarines
1 bunch green onions
1/4 c. cider vinegar
Instructions
Toss cubed chicken thighs, olive oil, and soy sauce; thread on soaked wooden skewers, alternating with cubed nectarines and green onions, and grill on medium-high, basting with cider vinegar, 10 minutes or until chicken is cooked through (165 degrees F), turning over once.
