Lunch: Tuscan Turkey Burgers

Ingredients

1 1/4 lb. ground turkey
1 medium zucchini
1/3 c. seasoned Italian breadcrumbs
1/3 c. grated Parmesan cheese
1/4 c. chopped sun-dried tomatoes in oil
4 slice smoked fresh mozzarella cheese
1/4 c. light mayonnaise
4 Hamburger buns
4 leaves Boston lettuce
4 slice tomato
8 fresh basil leaves

Instructions

Gently combine turkey, zucchini, breadcrumbs, Parmesan, sun-dried tomatoes, and 1/4 teaspoon each kosher salt and ground pepper. Divide mixture into 4 equal portions and loosely form them into 1-inch-thick patties.
Heat 1 1/2 tablespoons canola oil in a large, heavy skillet over medium heat until oil begins to shimmer. Cook burgers without moving them until bottoms are browned, 6 to 7 minutes per side.
Top each burger with a mozzarella slice. Cook over low heat 4 to 5 minutes longer, until centers are cooked through and an instant-read thermometer inserted into center registers 160 degrees F.
Spread mayonnaise mixture on cut sides of buns. Top buns with lettuce, tomato, a burger, and basil.
