Side Dish: Tomato and White Bean Salad

Easy to prepare side salad.

Ingredients

1/4 tsp coarsely ground black pepper
0.12 tsp salt
1 tsp red wine vinegar
1 tbsp extra virgin olive oil
6 cups shredded salad greens
4 tbsps green onions
2 medium whole tomatoes, chopped
15 1/2 oz great northern beans, drained and rinsed

Instructions

1. In a medium bowl, combine oil, vinegar, salt, and pepper, blending well.

2. Add tomatoes, greens, onions, and beans.

3. Stir gently until well mixed.

4. Serve at once.
