Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 1/2 tsps allspice
1/2 tsp cinnamon
2 tsps ground oregano
1 1/2 tsps black pepper
1/2 tsp salt
2 tsps thyme, crushed
1/4 cup vinegar
4 breasts, bone and skin removed chicken
4 drumsticks, bone and skin removed chicken
1 tsp hot pepper, crushed, dried
3 tsps hot pepper, chopped
6 cloves garlic, finely chopped
1 cup chopped onion
0.185 cup packed brown sugar (3 tbsp)

Instructions

1. Preheat oven to 350 °F (175 °C).

2. Combine all ingredients except chicken in large bowl. Rub seasoning over chicken and marinate in refrigerator for 6 hours or longer.

3. Evenly space chicken on nonstick or lightly greased baking pan.

4. Cover with aluminum foil and bake for 40 minutes. Remove foil and continue baking for an added 30–40 minutes or until the meat can be easily pulled away from the bone with a fork.
