Health and fertility benefits of Hoppin' John

Brown rice is a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity.

Ingredients

2 oz pork kielbasa
15.5 oz blackeye peas
1 envelope sazon
1 stalk medium celery
1 small onion, chopped
1/2 cup chopped green pepper
3 cups long grain brown rice

Instructions

1. In non-stick pan, cook kielbasa until done.

2. Add onion, pepper and celery, cook until onion is tender. Add blackeye peas, undrained.

3. Stir in Sazon packet. Add a little salt, pepper and/or hot sauce if you like.

4. Reduce heat and simmer 5 minutes.

5. Serve over brown rice.

6. Note: based on a recipe from the back of a Goya can.
