Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 1/2 cups quick oats
1 oz pecans
1 tsp cinnamon
1 tsp vanilla
1/2 cup raisins
1 cup water
1/3 cup brown sugar
2 cups skim milk

Instructions

1. Mix all ingredients together in a bowl.

2. Pour into a sprayed 8x8" baking pan or pie plate.

3. Bake at 350 °F (175 °C) for 30 minutes.

4. Note: any leftovers can be stored in the refrigerator and warmed in a microwave.
