Ingredients
1 tbsp extra virgin olive oil
1 tbsp cooking oil spray
3 tsps garlic, minced
1 tsp ginger
4 medium scallions, cut into 1" pieces
10 sprigs parsley, chopped
1 lb bay scallops
2 tsps soy sauce
3 cups cooked brown rice
4 tbsps vegetable oil-butter spread, reduced calorie
1 tsp white cooking wine
Instructions
1. Spray a 12" saucepan with any cooking spray of your choice, butter, and olive oil.
2. Sauté garlic for about 2 minutes on medium low heat.
3. Add scallops and sauté for about 3 minutes, or until brown on all sides.
4. Add all other ingredients except brown rice.
5. Sauté all ingredients for about 3 more minutes.
6. Add salt and pepper to taste.
