Lunch: Taco-Lime Pumpkin Seeds
Recipe by Candace Braun Davison Taco seasoning and fresh lime juice give this snack all the flavor of your favorite tostada.
Ingredients
2 tbsp. butter
2 c. pumpkin seeds
1 tsp. cilantro
1 tbsp. Taco Seasoning
1 tbsp. lime juice
Instructions
Preheat the oven to 275 °F. As it heats, microwave the butter in 20-second intervals until fully melted.
Toss the seeds in butter to coat them, then in the cilantro and taco seasoning. Spread them in an even layer on a baking sheet lined with parchment paper, then cook for 20 minutes. Once they're out of the oven, drizzle with lime juice, let cool for a few minutes, then serve.
