Dinner: Mixed Vegetables Pasta

Hearty pasta with onions, cabbage, mushrooms and bell peppers.

Total Time: 25 mins

Ingredients

1 tsp extra virgin olive oil
1/2 cup shredded cabbage
1/2 cup pieces or slices mushrooms
2 tbsps chopped onions
1/2 cup chopped red bell peppers
1 oz whole wheat thin pasta

Instructions

1. Cook and drain the pasta.

2. Chop all vegetables.

3. Slowly heat the olive oil.

4. Add vegetables and cook until soft.

5. Salt and pepper to taste.

6. To serve, add vegetables on top of freshly cooked pasta...yummy!
