Lunch: Zucchini Saute
Recipe by NIBLETS Sooo easy to make and double or triple if needed. Serve as the main meal with a salad and crusty bread, or as a side dish.
Ingredients
1 tablespoon vegetable oil
1 onion, sliced
2 tomatoes, chopped
2 pounds zucchini, peeled and cut into 1 inch thick slices
1 green bell pepper, chopped
salt to taste
ground black pepper to taste
1/4 cup uncooked white rice
1/2 cup water
Instructions
Heat oil in a saute pan over medium heat. Add onion, and cook and stir for 3 minutes. Add tomatoes, zucchini, and green pepper. Stir. Season to taste with salt and black pepper. Reduce heat, cover, and simmer for 5 minutes.
Stir in rice and water. Cover, and cook over low heat for 20 minutes.
