Crimini mushrooms are a tasty way of loading up on vitamins B2. Ingredients

4 tbsps parmesan cheese
1/2 tsp leaves oregano
1/4 tsp salt
1 tbsp extra virgin olive oil
6 oz crimini mushrooms
1 cup sliced zucchini
1 cup chopped red pepper
4 cups whole wheat spaghetti
1/2 cup fat free milk
4 oz low fat cream cheese

Instructions

1. Heat oil on low-medium flame in a medium sauce pan.

2. Add mushrooms, red pepper and zucchini.

3. Cook till vegetables are tender, stirring occasionally.

4. Lower temperature and add cream cheese, milk, oregano and salt.

5. Stir frequently till cream cheese is melted.

6. Add parmesan and pasta.

7. Serve hot.
