Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 stick Butter, Melted
3 whole Flour Tortillas (small Size)
1 cup Sugar
1 Tablespoon Ground Cinnamon

Instructions

Preheat the oven to 350 degrees.
Mix together the sugar and cinnamon.
Brush butter on one side of the flour tortillas. Sprinkle generously with the cinnamon sugar. Flip tortillas to the other side, then sprinkle on the cinnamon sugar.
Bake for 15-17 minutes until very crisp. Remove from oven and allow to cool completely.
Break into pieces and eat as snacks... or serve with ice cream!
