Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

2 tsps packed brown sugar blend
1 large egg
1 packet bananas & cream instant oatmeal
1 cup yogurt spread
1 cup whole wheat flour
1 tbsp cinnamon
1 dash salt
1 tsp vanilla extract
2 medium bananas
1 tsp baking powder
1 tsp baking soda

Instructions

1. Preheat oven to 375 °F (190 °C). Lightly grease 5 muffin cups or line with muffin papers.

2. Mix flour, baking soda, baking powder, cinnamon, oatmeal and salt in a large bowl.

3. Beat bananas, sugar, egg, vanilla and melted butter in another bowl.

4. Stir banana mixture into flour mixture just until moistened.

5. Spoon batter into prepared muffin cups.

6. Bake in preheated oven until golden and tops spring back when lightly pressed, 18-20 minutes.
