Lunch: Healthier Sloppy Joes II
Recipe by MakeItHealthy This healthier version of sloppy joes includes more veggies and real garlic. Be sure to serve on whole wheat buns!
Ingredients
1 pound lean ground beef
1/4 cup chopped onion
1/4 cup chopped green bell pepper
2 carrots, finely chopped
2 cloves garlic, minced
1 teaspoon prepared yellow mustard
3/4 cup ketchup
1 tablespoon brown sugar
salt and ground black pepper to taste
Instructions
Heat skillet over medium-high heat; cook and stir beef, onion, green bell pepper, carrots, and garlic until beef is browned, about 10 minutes. Drain off liquids.
Stir in mustard, ketchup, and brown sugar and mix thoroughly. Reduce heat to low and simmer until sauce has thickened, about 30 minutes. Season with salt and pepper.
