Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1/4 cup sugar
2 large eggs
1 cup skim milk
1 tsp cinnamon
1 tsp vanilla
2 tbsps margarine
1/2 cup rice

Instructions

1. Cook rice.

2. Beat eggs, add sugar to taste, and vanilla. Add scalded milk.

3. Put a tablespoon of margarine (or butter)into casserole, melt in oven.

4. Pour in rice and egg mixture. Should be quite soupy.

5. Add second tablespoon of margarine, sprinkle with cinnamon and sugar mix.

6. Bake for 20-30 minutes until knife comes out clean.

7. Serve with a little milk and additional cinnamon/sugar mix if needed.
