Lunch: Tomatillo Salsa

A classic salsa verde.

Ingredients

1 lb. tomatillos
1/2 c. red onion
1 tbsp. extra-virgin olive oil
3 tbsp. fresh lime juice
1 ripe avocado
1 medium jalapeno
2 tbsp. minced cilantro
1 tsp. salt
1 tsp. fresh-ground black pepper

Instructions

In a food processor, add tomatillos, onion, olive oil, and lime juice and pulse to chop. Transfer to a bowl and add avocado, jalapeno, cilantro, salt, and pepper. Toss to mix. Transfer to a serving bowl, cover, and refrigerate; keeps for up to 2 days.
