Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

10 cups popcorn (popped without salt or fat)
2 tablespoons light brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon salt
2 tablespoons butter, melted
Cooking spray

Instructions

Place popcorn in a large bowl. Combine brown sugar, cinnamon, and salt in a small bowl.
Drizzle popcorn with butter; toss to coat. Coat popcorn generously with cooking spray. Sprinkle with sugar mixture; toss well.
Kids Can Help: While the popcorn pops, kids can measure the cinnamon-sugar mixture and then toss it with the popcorn and butter.
