Lunch: Mom´s Light Meatloaf

Made with a mixture of ground beef and ground turkey, this juicy loaf pairs savory flavor with a lean profile.

Ingredients

3/4 lb. extra-lean ground beef
3/4 lb. ground turkey breast
1 cup shredded carrots
1/2 cup Progresso™ Plain Bread Crumbs
1/4 cup finely chopped onion
2 teaspoons Worcestershire sauce
1/2 teaspoon garlic powder
1 (8-oz.) can tomato sauce
2 eggs, beaten
1/2 cup barbecue sauce

Instructions

Heat oven to 350 °F. Spray 9x5-inch loaf pan with nonstick cooking spray. In large bowl, combine all ingredients except barbecue sauce; mix well. Press mixture in pan. Brush barbecue sauce over top.
Bake at 350 °F. for 60 to 70 minutes or until thoroughly cooked in center and thermometer inserted into center registers 160 °F. Let stand 10 minutes before slicing.
