Health and fertility benefits of Quinoa Porridge with Cinnamon Apples

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 cup red quinoa, rinsed and drained
2 cups water
1 tablespoon butter
1 apple - peeled, cored and diced
1/2 teaspoon salt
1 tablespoon ground cinnamon
2 tablespoons maple syrup
1/3 cup sliced almonds
1 1/2 cups almond milk
1 tablespoon half-and-half cream, or to taste (optional)

Instructions

Bring the quinoa and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender and the water has been absorbed, about 15 to 20 minutes.
Melt the butter in a large skillet over medium heat. Add the apple, and sprinkle with salt, cinnamon, and maple syrup. Stir in the almonds; cook and stir until the apple is hot and beginning to soften, 2 to 3 minutes. Pour in the almond milk and half-and-half cream; continue cooking until hot. Stir in the hot quinoa, and cook a few minutes before serving.
