Ingredients

1/3 c. flour
3 tbsp. buttermilk or whole milk
3 tbsp. sugar
1 pinch kosher salt
1 stick unsalted butter, chilled and cut into cubes

Instructions

Preheat oven to 350 º. In a bowl, combine flour, buttermilk or milk, sugar, and salt and, using your fingers, work in butter until mixture resembles coarse crumbs. (Alternatively, you can pulse this together in a food processor.)
Reserve 1/4 cup of crust mixture for crumb topping. Pat mixture into a buttered 8-x-8 glass baking dish and bake until golden, 10 minutes.
In a separate bowl, whisk together egg, sour cream, sugar, lemon juice, and vanilla extract until combined. Fold in strawberries, flour, and salt. Pour mixture over baked crust and top with reserved crumb topping.
Bake until cooked through and top is golden and bubbly, about 1 hour.
Let cool before slicing.
