Lunch: Cucumber Salad
Ingredients
4 English cucumbers, peeled and thinly sliced
2 teaspoons kosher salt
1/2 cup white vinegar
1 teaspoon minced garlic
1/2 teaspoon sugar
1/4 teaspoon freshly ground black pepper
Hungarian sweet paprika, for sprinkling
Instructions
Put the cucumber slices in a colander over a large bowl, sprinkle them with the salt and let stand for 45 minutes to an hour. Press the cucumbers down with your hand to squeeze out as much water as possible.
Combine the vinegar, garlic, sugar and pepper in a large bowl. Add the cucumbers and toss to coat. Cover with plastic wrap and let stand for another hour. Sprinkle with paprika and serve.
