Dinner: Garlic Parsley Shrimp

Recipe by Judy Kim The simple combination of garlic, butter and parsley never fails.

Ingredients

2 tbsp. extra-virgin olive oil
4 garlic cloves, grated
1 lb. shrimp, peeled and deveined
kosher salt
Freshly ground black pepper
3 tbsp. butter
1/2 c. chopped parsley

Instructions

In a large sauté pan over medium heat add olive oil and garlic; cook for 1 minute, stirring with a wooden spoon. Add shrimp, season with salt and pepper and cook for about 2 minutes on each side.
Increase heat to medium-high and add butter. When butter begins to foam add parsley. Cook until parsley is crispy and shrimp is pink with browned edges.
Transfer to a platter and serve.
