Lunch: Short Ribs
Recipe by Woman's Day Kitchen No marinating, grilling or sautéing required for this recipe—simply toss all the ingredients together and set your slow cooker on low. Hours later, enjoy a rustic vegetable and beef dish accented with dill.
Ingredients
1 can beef broth
1 c. chopped onion
2 small sweet potatoes, peeled
2 medium parsnips
8 oz. baby carrots
4 meaty beef short ribs
1/4 tsp. Pepper
3 sprig fresh dill
1 can diced tomatoes in juice
Garnish: snipped dill
Instructions
Mix all ingredients except short ribs, pepper, dill and tomatoes in a 3-qt or larger slow-cooker. Top with short ribs, sprinkle with pepper, then add dill and tomatoes.
Cover and cook on low 7 to 9 hours until ribs are very tender. Spoon fat off surface. Serve in shallow soup plates; sprinkle with dill.
