Snack: First-To-Go Texas Queso Dip

Not for the faint-hearted, this queso dip has Texas-sized flavor, with a rich, gooey blend of cheese that's spiked with sausage, jalapeño peppers, cilantro, and chopped onion.

Ingredients

12 oz. 50%-less-fat pork sausage
1 c. chopped onion
2 large jalapeño peppers
1 tbsp. minced garlic
1 box reduced-fat or regular Velveeta
1/4 c. milk
1 c. diced tomato
1/3 c. Chopped cilantro
Hot pepper sauce
Serve with: unsalted tortilla chips

Instructions

Heat a large nonstick skillet over medium heat. Add pork, increase heat to medium-high and cook, breaking up chunks, 2 minutes.
Add onion and cook 5 minutes, continuing to break up sausage, until onion is almost tender. Stir in peppers and garlic; cook 2 minutes, or until sausage is cooked and onion is soft.
Stir in cheese and milk. Reduce heat to low and stir until cheese melts. Remove from heat; stir in remaining ingredients. Spoon into a microwave-safe serving bowl (to reheat dip during party).
