Lunch: Pumpkin-Spiced Buttercream
Recipe by Clinton Kelly This pumpkin spice mixture is better and cheaper than the prepackaged stuff, and you can add it to all kinds of treats.
Ingredients
1 lb. confectioners' sugar
1 1/2 tbsp. pumpkin spice
1 c. (2 sticks) unsalted butter, at room temperature
2 tbsp. heavy cream
2 tsp. pure vanilla extract
Instructions
Sift the confectioners' sugar and pumpkin spice into a large bowl. Using an electric mixer, beat the butter on medium speed until creamy, about 2 minutes. Reduce speed to low and gradually add the sugar mixture, alternating witht he heavy cream. Mix in the vanilla. Increase the speed to high and beat until fluffy, about 2 minutes.
