Dessert: Banana-Chocolate Crunch

Ingredients

1 c. old-fashioned oats
1 c. light brown sugar
1/2 c. flour
1/4 tsp. salt
6 tbsp. unsalted butter
1/2 c. chopped pecans
2 bananas
1/3 c. semisweet chocolate chips

Instructions

Preheat oven to 350 degrees F. Lightly grease 8-inch square metal baking pan.
In large bowl, combine oats, 2/3 cup brown sugar, flour, and salt. With pasty blender or 2 knives, cut in butter until mixture resembles coarse crumbs. Stir in pecans.
Spread half of crumb mixture evenly over bottom of baking pan, pressing it gently into corners. Dice bananas and scatter them and chocolate chips over crust. Sprinkle remaining 1/3 cup brown sugar and top with remaining crumb mixture.
Bake 40 to 45 minutes, or until top is golden brown, and begins to pull away from sides of pan. Transfer pan to rack to cool 20 minutes. Cut into 8 equal bars and serve while still warm.
