Lunch: Shaved Smoked Pancetta with Balsamic-Brown Sugar Glaze

Ingredients

1/3 cup balsamic vinegar
1 tablespoon light brown sugar
1/8 teaspoon freshly ground black pepper
Canola oil, for brushing
8 ounces smoked pancetta, sliced 1/8-inch thick

Instructions

Preheat the oven to 400 degrees F.
Whisk together the vinegar, sugar and pepper in a small saucepan until smooth, bring to a simmer over medium heat, and simmer until slightly thickened, about 3 minutes.
Brush some canola on a baking sheet. Lay the pancetta out in single layer bake in the oven for 5 minutes. Turn the pancetta over, brush with the balsamic mixture, and return to the oven to continue baking until golden brown and crisp, about 10 minutes longer. Remove to a platter.
