Lunch: Hamaknockers Brunswick Stew

Ingredients

1 1/2 cups chicken broth
1 cup beef broth
3/4 cup BBQ sauce (tomato-based preferable)
1/2 cup ketchup
1/4 cup Worcestershire sauce
1 tablespoon garlic powder
1 tablespoon hot sauce
1 1/2 teaspoons iodized salt
1 1/2 teaspoons finely ground black pepper
3 bay leaves
2 baked skin-on white potatoes, diced
1 cup diced celery
1 cup diced carrot
1 large red onion, diced
1/4 cup liquid butter or melted unsalted butter
1 pound favorite smoked pulled pork, such as Hamaknockers Smoked Pulled Pork
8 ounces favorite smoked pulled chicken, such as Hamaknockers Smoked Pulled Chicken
One 26.5-ounce can kernel corn, drained
One 26.5-ounce can mixed vegetables, drained
One 26.5-ounce can diced tomatoes, drained
One 14-ounce can diced tomatoes with green chiles, drained

Instructions

Sweat the diced celery, carrot and onion in the liquid butter (or unsalted butter) on medium-high heat in a pot until translucent, 5 to 8 minutes. Add the pork, chicken, corn, mixed vegetables, diced tomatoes, diced tomatoes with chiles, chicken broth, beef broth, BBQ sauce, ketchup, Worcestershire, garlic powder, hot sauce, salt, pepper, bay leaves and potatoes and stir. Bring to a boil and then reduce to a simmer. Simmer the mixture, uncovered, on low heat for 2 to 3 hours, stirring often. Serve hot in a bowl.
