Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

2 c. coffee ice cream
1/2 c. milk
1/4 c. pumpkin purée
1/2 tsp. pumpkin spice
1/2 tsp. vanilla extract
Caramel sauce, for serving
Whipped cream, for serving
Cinnamon stick, for garnish (optional)

Instructions

Combine ice cream, milk, pumpkin puree, pumpkin spice, and vanilla in a blender. Blend until smooth.
Drizzle the inside of a pint glass (or another tall glass) with caramel sauce. Fill the glass with the milkshake, top with whipped cream and more caramel sauce. Garnish with a cinnamon stick, if desired.
