Dessert: Oatmeal Carob Cookies

The most sinfully half-healthy delicious cookies ever.

Ingredients

1 cup oatmeal, uncooked
3/4 cup whole wheat flour
1/2 cup packed brown sugar
4 oz carob chips (1/2 cup)
1/2 cup reduced calorie butter blend
2 oz splenda (1/4 cup)
1 large egg
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp vanilla extract

Instructions

1. Pre-heat oven to 375 °F (190 °C).

2. Into a large bowl, measure all ingredients. With mixer at medium speed, beat ingredients until well mixed, occasionally scraping bowl.

3. Drop by teaspoonfuls, 1" apart, on to cookie sheet.

4. Bake 12 minutes or until lightly browned.

5. With spatula, immediately remove cookies to wire racks; cool.

6. Makes about 2-4 dozen cookies based on your drop size.
