Side Dish: Fried Potatoes
Low fat chunky fried potatoes make for the perfect comfort side dish.
Ingredients
1 lb potato
1 cup sliced onion
1 fl oz water
2 dashes salt
3 dashes pepper
10 sprays buttery spray
2 sprays olive oil cooking spray
Instructions
1. Wash and slice potatoes into 1/4" slices.
2. Spray non-stick skillet with cooking spray like Pam, and pre-heat briefly. Do not allow to brown or smoke, just a few seconds.
3. Place potatoes and onion in pan, add salt and pepper, spray top lightly with cooking spray and cover with lid.
4. Cook on medium to medium-low heat until browned and turn potatoes.
5. Cook 5 minutes longer to brown slightly then add water, replace lid and continue to cook until potatoes are tender and water is evaporated.
6. Spray with buttery spray and serve.
7. Note: green peppers are also good with this recipe.
