Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 stick butter
1 large egg
1/2 tsp vanilla
1/2 cup unpacked brown sugar
1/4 cup granulated sugar
1/2 tsp baking soda
3/4 cup flour
1/2 tsp cinnamon
1 1/2 cups oats
1/4 cup chips chocolate chips
1/4 cup raisins

Instructions

1. Mix all ingredients together.

2. Put on cookie sheet, one tablespoon dough makes one cookie.

3. Bake at 350 °F (175 °C) for 8-12 minutes.
