Ingredients
1 tsp salt
1 1/2 cups unsweetened soy milk
1/4 cup vegetable oil
1 wedge yields lemon juice
2 tsp baking powder
1 cup whole wheat flour
2 large eggs
3 packets sweetener
1 cup dry quick oats
Instructions
1. In large bowl, combine the oats, flour, sweetener (like Splenda), salt and baking powder.
2. Combine the eggs, milk, oil and lemon juice; add to dry ingredients and stir just until moistened.
3. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes.
4. Cook until second side is golden brown.
