Side Dish: Spicy Coleslaw
Spicy and low fat coleslaw.
Ingredients
200 g yogurt, lowfat
2 limes yield lime juice
1 tsp cayenne pepper
1 tsp ground cumin
1 clove garlic, crushed
1 dash salt
1 dash ground black pepper
1 head medium white cabbage, shredded
1 medium red pepper, strips
1 large yellow pepper, strips
1 medium orange pepper, strips
8 medium spring onions, chopped
4 sprigs coriander, chopped
Instructions
1. In a large bowl, mix together the yogurt, lime juice, cayenne, cumin and garlic.
2. Season with salt and freshly ground black pepper.
3. Mix the cabbage, red, yellow and orange peppers, coriander and spring onion into the yogurt dressing.
4. Serve.
