Health and fertility benefits of Fragrant Basmati Rice

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 cup basmati rice (7 ounces)
2 teaspoons vegetable oil
4 cardamom pods, lightly smashed
1 small cinnamon stick
2 bay leaves
1 1/2 cups water
Salt

Instructions

In a sieve, rinse the basmati rice under cold running water until the water runs clear, about 2 minutes. Drain the rice until dry, shaking the sieve occasionally, about 5 minutes.
Heat the oil in a medium saucepan until shimmering. Add the cardamom, cinnamon stick and bay leaves and cook until fragrant, 30 seconds. Add the rice and cook, stirring, until opaque, about 2 minutes. Add the water and a generous pinch of salt and bring to a boil. Cover and cook over low heat until the water is absorbed and the rice is tender, about 18 minutes. Remove from the heat and let stand, covered, for 10 minutes. Fluff with a fork, discard the spices and serve.
