Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients
4 tbsps cream cheese
10 large eggs
1 tbsp cinnamon
1 dash salt
2 tbsps butter, reduced calorie
Instructions
1. Break eggs into bowl and beat until frothy.
2. Add cinnamon and a pinch of salt.
3. Melt butter in medium skillet, pour in egg mixture and cook until just barely set.
4. Remove from heat and stir in cream cheese that is cut into cubes. Stir until there are ribbons of cream cheese running throughout the mixture.
5. Separate into servings and top each serving with a little butter and a drizzle of sugar free maple syrup.
