Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Ingredients

2 cans (15-3/4 ounces each) sweet potatoes, drained and mashed
1/2 cup sugar
1 large egg
1/4 cup butter, melted
1/2 teaspoon ground cinnamon
Dash salt

Instructions

Preheat oven to 350 °. In a large bowl, combine first six ingredients. Transfer to a greased 8-in. square baking dish. Combine topping ingredients; sprinkle over sweet potato mixture.
Bake, uncovered, 20-25 minutes or until a thermometer reads 160 °.
