Lunch: Quick Pickled Cucumbers
Ingredients
1 seedless cucumber, very thinly sliced
1/4 cup seasoned rice vinegar
1 tablespoon sugar
Pinch salt
2 tablespoons chopped cilantro leaves
Instructions
Stir all of the ingredients together in a medium serving bowl. Serve immediately or let it marinate in refrigerator until ready to serve.
