Lunch: Watermelon Margarita Mimosa

Ingredients

1 to 2 cups fresh watermelon juice
3/4 cup silver tequila
2 tablespoons triple sec
Juice of 1 lime
Simple syrup
1 bottle chilled cava

Instructions

Special equipment: 4 chilled Champagne flutes
Combine the watermelon juice, tequila, triple sec and lime juice in a pitcher and add simple syrup to taste. Fill 4 chilled Champagne flutes halfway with the margarita and top off with the chilled cava.
