spiny gourd quarters are slow roasted in spices which bring out the flavor of the vegetable. It has a meaty texture and a unique flavor and makes a good side with rice and rasam or pappu pulusu. http://www.vahrehvah.com/spiny-gourd-onion-tomato-fry Ingredients: Spiny Gourd (Aa kakarakaya) 200 g Oil 1 tb Mustard seeds ¼ ts Cumin seeds ¼ ts Garlic crushed 5 cloves Onions 2 n Salt Turmeric Tomatoes 2 n Chilly powder 1 ts Cumin powder ½ ts Coriander powder 1 ts Coriander chopped 1 b First take spiny gourd (Aa kakarakaya) fry in the hot oil, keep it aside. Pour some oil in the pan, when oil is hot add mustard seeds, when mustard seeds splutter add cumin seeds, crush garlic, slices of onions, salt, sauté it for a minute then add turmeric, chopped tomato, chilly powder, cumin powder, coriander powder, mix it well cook for 2 minutes then add spiny Gourd put the lid on and let it cook for some time, then add chopped coriander.
