Lunch: Black Bean Salsa

Black beans, corn, tomatoes and avocado come together quickly to make a tasty salsa.

Ingredients

2 (15 oz) cans black beans, rinsed and drained
2 ears of fresh corn, (about 2 cups of kernels)
2 large tomatoes, seeded and chopped
1 large avocado, peeled and chopped
1 small onion, chopped
3 tablespoons lime juice, (up to 4 tablespoons)
1 tablespoon red wine vinegar
salt, to taste
pepper, to taste

Instructions

Mix all ingredients thoroughly in a large bowl. Taste. Add salt, pepper or lime juice as necessary.
Serve with tortilla chips as an appetizer or with grilled chicken breast as a meal.
